It's about time for a recipe!

Mini Apple and Sultana cakes

This is a really quick and easy cake recipe which I make in silicon cupcake cases as they hold things together better as the mix is quite wet.

I got some from poundland years ago, I think they were £1 for 6 of them.  If you fancy something a bit more unusual I just had a quick check of ebay and found these cute heart shaped ones.  I think I may have to invest in 12 of these.  To take a peak at the ones that will be winging their way to me click HERE

The ingredients should all be in your store cupboard, you can substitute the spices or fruit to what you have.  I've used several different fruits but like apple best.

100g butter
200g golden syrup
300g self raising flour, works well with Gluten Free SR flour too.
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp mixed spice or cloves
1/2 tsp ginger
2 medium eggs whisked
2 sharp apples grated including skins
75g of raisins or sultanas or other dried fruit you have.
1 1/2 tbsp demerara sugar

These are so easy to make.

Put the butter and golden syrup in a dish and heat in microwave to melt.

Put all dry ingredients in a large bowl, add grated apples, eggs and melted butter/syrup.

Mix all ingredients well.

Fill 3/4 full 12-18 cases depending upon size

Cook at around 200 degrees centigrade for about 20 minutes depending upon oven.

Eat as soon as they are cool and they freeze well.
