Ditch the takeaways- Quick and easy Meals

It's the little things that add up when you are stretching your pennies further and a takeaway when you are running late is an (expensive) quick fix for a rumbling tum.

If you can keep a couple of easy peasy pre-prepared meals in the freezer.  Add to that a supermarket pizza and garlic bread that you can pop in the oven.  If you are feeling a little bit adventurous one of our quick and easy faves is a frittata and you can pop into it any veg that you have in the cupboard/fridge/freezer.

Only last week, after a busy day at work we went for a frittata for tea.  5 minutes preparation, 10 minutes cooking.  Faster than it takes to call up your local takeaway. So here we go, add or omit anything to the recipe but this is what we like

1 onion diced into small squares
1 courgette diced into small squares
1 pepper diced into small squares
A handful of mushrooms
A handful of frozen peas
A handful of sweetcorn 

A few mixed herbs

Get 6 eggs and give them s good old whisk in a large bowl. Add the veggies to it.  Add the herbs.  Season as required.

Get a frying pan, gently heat a tablespoon of oil.  Pop in the egg/veg mix and cook on a medium heat.  Use a knife or spatula to go around the edges to stop it sticking and check to see when the bottom is getting brown which takes about 5 minutes.

Transfer the frying pan to the grill part of your oven.  Careful not to put the handle into the heated area of course.  At this point you can add cheese to the top if you would like.  Leave under the grill until cheese bubbles or if you went for the no cheese option til the egg starts going brown. This takes about 5 minutes.

Once it is cooked through, slide onto a plate and slice using a pizza cutter into triangles.  Serve with a green salad, salad potatoes or pasta salad or on its own with a squirt of tomato sauce!
